Pad Thai Noodles with Almond/Lime Sauce

I got this recipe from Ani Phyo's new recipe book. It was easy to prepare, especially with a mandolin and heavy duty blender. I didn't have to prep any ingredients the day before, and it took between half an hour and 45 minutes to make (probably about the same amount of time it would take to prepare regular pad thai). The final taste is very fresh (lime juice) and not too complicated. Yum!
