Kale Salad

Last night, I watched Karen Knowler's YouTube video on how to make kale salad. So naturally, today I made it (right?)!
Actually, I happened to have some awesome kale from the Olympia farmer's market that was headed for the juicer, so I just repurposed it (grabbing some avocado and "himalayan" salt after lunch at Marlene's).

The salad:

  • rip kale in small pieces (saving stems for juicing)
  • add generous amount of olive and flax oil, and massage into kale (with the aim of softening it up)
  • add salt (to taste)...massage...
  • add juice of 1/2 large lemon...massage more...
  • cut avocado into small pieces, add and MASSAGE most of it into the mixture (a few chunks were nice)
  • we like spicy, so we added some cayenne at the end (and think we might add some cherry tomatoes next time)

Takes a bit of chewing, but the overall effect is very nice (bright from the lemon, and salty, but creamy from the oils and avocado). And it took under 10 minutes to make!!!

Kale is my "basic green" for salads. It requires "massaging" of the finely chopped leaves with lemon and olive oil to tenderize. It has the advantage of being a salad that "travels" well. I make it in the morning, let it sit out at room temperature until lunch time, and then enjoy a nutritious meal. My variations on kale salad follow:

First variation:
washed and torn kale leaves
minced crimini mushrooms
minced carrot
minced celery
minced green or red onion

Marinate this salad in a dressing made of:
1-1/2 tbsp fresh lemon juice
1/2 tsp dijon mustard
1/2 tbsp mellow white miso (the magic ingredient!)
1/4 c. olive oil

Second variation:
washed and torn kale leaves
grated raw beets
a few raisins
a few walnut pieces
thinly sliced carrot (beautiful stained with beet juice!)
thinly sliced red cabbage (optional)
minced red onion (optional)

Marinate this salad in lemon juice and olive oil (equal parts).
