Carrot and Beet Salad

Spirilized Beets (Golden and Red) and Carrots with a Vinaigrette Dressing. I didn't add the dressing until the last minute (or the red beets) because I didn't want the salad to turn brown. By the end of the party, it was brown, but it still looks pretty good in this picture. My awesome De Buyer Mandoline has a spiral slicer attachment, making curly, lovely noodles - some over 5 feet long!
