August Banquet

My mom, enjoying some wild rice salad, and our neighbor Gigi, enjoying a raw Pina Colada from Matthew Kenney and Sarma Melngailis' "Raw Food Real World" book (young coconut meat and water, lime juice, vanilla, pineapple, agave, salt, ice and light rum - they use sake, I use rum :).

Kale Salad

My mom made this recipe with dino kale, avocado, crimini mushrooms, zucchini, red onion, oil (olive & hemp) and spices. Delicious!
P.S. In the background are my Chili Lime Corn Chips (left) & Autumn Wild Rice (right), from Renee Loux's Living Cuisine book. They were AMAZING.

Carrot and Beet Salad

Spirilized Beets (Golden and Red) and Carrots with a Vinaigrette Dressing. I didn't add the dressing until the last minute (or the red beets) because I didn't want the salad to turn brown. By the end of the party, it was brown, but it still looks pretty good in this picture. My awesome De Buyer Mandoline has a spiral slicer attachment, making curly, lovely noodles - some over 5 feet long!
